Tomato Soup with Fresh Mozzarella

  • Galbani® Fresh Mozzarella 226g Ball
  • 1/4 cup Long Grain Rice
  • 1 Onion
  • 1 tbs Butter
  • 3/4 l Tomato Juice
  • 1/4 l Vegetable Broth
  • 3 tbs Basil
  • 1 pinch Sugar
  • Salt and Pepper

Preparation Instructions

  1. Cook the rice as instructed on the packet. In the meantime, peel and finely chop the onion, gently fry in a saucepan with the butter and then add the tomato juice and the vegetable broth.
  2. Add the basil and the rice, which you have drained and seasoned with salt, pepper and sugar.
  3. Cut the fresh mozzarella into cubes; at the last minute, before serving, distribute it over the soup. Delicious with crunchy herb bread.
